A spicy Shakshuka! Perfect for Breakfast, Brunch or Dinner 😋

INGREDIENTS: (2-4 ppl)
2 tbsp olive oil
1 onion, chopped
1/2 red bell pepper, chopped
2 cloves garlic, minced
3 jalapeños, chopped
1 tsp coriander powder
1 tsp paprika powder
1 tsp cumin
400g (14oz) canned tomato
4 eggs
salt and pepper to taste
Topping: any of coriander or parsley or mint, chopped
To serve:any of crispy bread or naan or your favourite bread

INSTRUCTIONS:
1️⃣ Put olive oil in a skillet on medium heat. Add the onion and red bell pepper. Cook for 4 mins while stirring.
2️⃣ Add the garlic, jalapeño and the ground spices. Cook for additional 4 mins while stirring. Then add the canned tomatoes. Let it simmer for 10 mins until the tomato mixture begins to reduce. season with salt and pepper.
3️⃣ Make four wells in the tomato mixture and crack each egg in the wells. Put on a lid and turn the heat down to low. Cook until egg whites are set.
4️⃣ Drizzle chopped herbs on top and serve immediately with bread.
