Put some crunch in your lunch with this Quinoa Chickpea Sweet Potato Bowl.. its tasty, easy, a little bit spicy and brand new to our menu for 2021.

Ingredients for 2

1/2  cup quinoa + 1 medium sweet potato + + 1/2 can of low sodium chickpeas +1 small beet +1 radish +1 Jalapenos +Black sesame + 2 kale leaves +1 fresh red pepper + 1 semi-ripe avocado +1 tsp olive oil +Salt and pepper

For the dressing: Lime juice +Ginger, grated + Garlic, grated + Soy sauce +Sesame oil

Rinse quinoa. Bring water to a boil in large saucepan; stir in quinoa. Cover and simmer 15 minutes, or until absorbed.

In a small bowl, combine sesame oil, lemon juice, soy sauce, ginger, garlic for dressing.

Cut all the vegetables into thin sticks. I steam them for 6 minutes or leave raw.

rinse chickpeas in water from can. 

Fill individual bowls with quinoa, top with  veggies, add dressing and sprinkle black sesame.
