Delicious, Healthy, Low carb and high in protein. Perfect as a full meal or filling snack.
Ingredients
1 bell pepper (your favourite colour)
3 spring onions
4 little cherry tomatoes/one normal tomato
6 eggs
1 handful spinach/ green leaves
2 slices any cheese
½-1 tsp salt
4-5 splashes hot sauce
Instructions
-Preheat the oven to 375 degrees. Coat 6 cups of a muffin tin with olive oil spray or line with paper liners.
-Crack the eggs into a large bowl. Use a hand blender or a whisk to blend the eggs until smooth.
-Add the spinach, peppers, onions and cheese to the egg mixture and stir to combine.
-Divide the egg mixture evenly among the muffin cups.
–Bake for 15-18 minutes or until eggs are set.
Serve immediately or store in the refrigerator until ready to eat.
COOKING TIME: How do you like your eggs? Rather soft? Stick to 20 minutes baking time. If you like them well done, almost crunchy, go for 25 minutes!
