										<content:encoded><![CDATA[<p>Delicious, Healthy, Low carb and high in protein. Perfect as a full meal or filling snack.</p>
<p>Ingredients<br />
1 bell pepper (your favourite colour)<br />
3 spring onions<br />
4 little cherry tomatoes/one normal tomato<br />
6 eggs<br />
1 handful spinach/ green leaves<br />
2 slices any cheese<br />
½-1 tsp salt<br />
4-5 splashes hot sauce<br />
Instructions<br />
-Preheat the oven to 375 degrees. Coat 6 cups of a muffin tin with olive oil spray or line with paper liners.<br />
-Crack the eggs into a large bowl. Use a hand blender or a whisk to blend the eggs until smooth.<br />
-Add the spinach, peppers, onions and cheese to the egg mixture and stir to combine.<br />
-Divide the egg mixture evenly among the muffin cups.<br />
&#8211;Bake for 15-18 minutes or until eggs are set.<br />
Serve immediately or store in the refrigerator until ready to eat.<br />
COOKING TIME: How do you like your eggs? Rather soft? Stick to 20 minutes baking time. If you like them well done, almost crunchy, go for 25 minutes!</p>
